苹果酸，又名2－羟基丁二酸，由于分子中有一个不对称碳原子，有两种立体异构体。大自然中，以三种形式存在，即D－苹果酸、L－苹果酸和其混合物DL－苹果酸。白色结晶体或结晶状粉末，有较强的吸湿性，易溶于水、乙醇。有特殊愉快的酸味。苹果酸主要用于食品和医药行业。
